Nutritious and delicious protein balls

These protein balls make a delicious and nutritious snack at any time. Quick and easy to prepare, they’re the perfect grab-and-go snack.

1 cup oats (whizzed in food processor)

1 cup almond meal

1 cup carrots (boiled then mashed like potato)

4 tablespoons coconut oil

4 tablespoons honey

1/2 teaspoon baking powder


Combine all ingredients and stir to combine. Roll into balls then toss in slivered almonds to coat.

Bake in 170 degree Celsius oven for about 20 minutes or until golden. Remove from oven, cool slightly, then transfer to baking tray and allow to cool completely.

This recipe makes about 20 protein balls, and if for some unknown reason you have leftovers (I never do!), they will freeze well. Just be sure to allow them to defrost naturally – no microwave!


Strictly speaking, they’re not to be included in a sugar-free diet due to the honey, but I’m working on an alternative! In the meantime, you should definitely try these if you’re looking for a healthy substitute for a mid-morning muffin 🙂
