This is a quick and simple desert that will get you through the sweltering summer. After purchasing an excess supply of mangos (who doesn’t when they’re in season?) I froze them with the intention of using them in a batch of my favourite gelato recipe. Then I started the 8 week no sugar challenge. Dammit! How could I fix my craving without the added sugar? Mango and raspberry gelato

Ingredients:

1 frozen mango, slightlyΒ thawed

1/2 cup frozen raspberries

1/2 fresh lime

Method:

Peel frozen mango and slice as much flesh from the seed as you can. Add to food processor with frozen raspberries and lime. Blend until the mixture reaches the consistency of your liking πŸ™‚

Enjoy!

Note: This is not your average gelato. It is fat-free and sugar-free (no added sugar), so the taste is absolutely pure, refreshing andΒ – yummy!
