Chocolate and coconut ice cubes
This is a fantastic recipe by Sarah Wilson and the first thing I made from her I Quit Sugar book! These chocolate coconut ice cubes are great to have in the freezer at the ready for when you need to satisfy a sweet craving. Whether you want to eat one on its own with a coffee, add them to smoothies or pancakes (try my banana nut pancakes with chocolate and coconut), they are a healthy, sugar-free option.
3 tablespoons of coconut oil, softened or melted
1 1/2 teaspoons raw cacao powder
2 tablespoons hazelnut meal (optional)
Mix all the ingredients in a cup using a teaspoon until blended. Put in the fridge or freezer until firm.
