Bacon, leek and sweet potato soup

A simple soup of bacon, leek, and sweet potato is anything but ordinary. The intensity of the flavours, the beefiness of the bacon, and the filling sweet potato ensures this humble yet hearty soup is a winner among even the fussiest of eaters. It’s also an economical meal packed full of nutrients, particularly if you use homemade stock. Enjoy!

Bacon, leek and sweet potato soup

Ingredients:

1 tablespoon of butter or coconut oil

500gm bacon, diced

1 large leek, sliced

1.5 litres chicken stock (or at least 1/5 litre of home made chicken stock + 1 litre water)

1/2 a large sweet potato, peeled and cubed

2 large carrots, sliced

1/2 head of cauliflower, chopped into small florets

Fresh thyme

Method:

Melt butter/coconut oil in a large cast iron pot over low-medium heat until melted. Add the leeks and fry until translucent. Add the bacon and cook, stirring for two minutes.

Add the stock and vegetables then bring to the boil. Reduce heat to a simmer, then cover and cook on low heat for 40 – 60 minutes.

Serve with fresh thyme.

Serves 8 – 10.
